Mashed potatoes are one of my favorite side dishes. There is nothing I love more then a serving of hot creamy mash potatoes with my meal. Unfortunately the downfall is if you don’t want a heavy starchy meal at night then mash potatoes may not be the best option. Thankfully cauliflower has proved to be an excellent replacement! I find with this recipe the tastes between the two are almost indistinguishable. The only main difference is that one is 100’s of calories and the other is under 100 calories!  Try this recipe and see for yourself!

Ingredients
  1. Medium-sized head of cauliflower, chopped into florets
  2. 3 fresh garlic cloves
  3. 1 teaspoon of fresh thyme leaves
  4. 1 teaspoon of freshly chopped green onion
  5. 1 teaspoon of fresh or dried oregano
  6. Pinch of salt and pepper
Instructions
  1. Fill a large saucepan with about an inch of water, and insert a steamer basket. Bring the water to a boil, and add the cauliflower florets. Lower the heat to a simmer and let the cauliflower steam for about 5-9 minutes until tender.
  2. Once ready, drain the cauliflower and add them to a food processor. Once its in the food processor you may add the spices mentioned in the ingredients list.
  3. If more liquid is needed during the blending, you may add water or almond milk! Don't hesitate to add more spices then mentioned, personally I had great success following this exact recipe and highly recommend it.
  4. Great now its ready to serve!
Notes
  1. This is a great side dish for your favorite meals. Pairs well with grilled salmon, steak or perhaps with turkey at thanksgiving dinner! If your a cheese lover, you may add your favorite melted cheese on top of the mashed cauliflower! Enjoy :)
