This is my favorite way to prepare and eat tomatoes. You will quickly be amazed at how great these tomatoes will taste after following these 9 simple steps. This recipe is meant to be a side dish but I’m warning you it’s really easy to get full off of them 😉 All you will need is oregano, olive oil, garlic cloves, organic tomatoes and sea salt (preferably Himalayan sea salt)

  1. 2 tomatoes
  2. 2 cloves of garlic
  3. 1-2 teaspoons of extra virgin olive oil
  4. 1 pinch of oregano
  5. 1 pinch of sea salt
  1. Cut 2 tomatoes in halves to make 4 slices.
  2. Finely chop 2 garlic cloves.
  3. Push the chopped garlic deeply inside the tomatoes so they aren't visible.
  4. Drizzle olive oil on each tomato, measure by eye.
  5. Add a pinch of oregano on the tomatoes.
  6. Put tomatoes face up on grill, preferably BBQ (like photo) at medium to high heat for 12 minutes.
  7. When tomatoes are soft to touch and feel moist they are ready.
  8. Plate the tomatoes and drizzle some more olive oil and add a pinch of sea salt.
  9. Ready to serve!

You can enjoy these tomatoes on top of grilled eggplant or eat them with a warm baguette with for a delicious bruschetta. I personally like to eat it by themselves because it’s just sooo good. My mouth is literally watering just talking about it. The tomatoes become so soft that they fall apart the minute you touch them. Not to mention the garlic that’s inside melts like butter! This side dish will blow your friends and family away and will be the highlight of the meal.
